First, the reason I ordered this pan was I could not find a traditional copper or tin Cannele mold. My first attempt was not good and the cannele's did not come out and stuck very badly. I finally got the mold cleaned and tried again. The secret is you must overly butter the mold and they will pop right out fantastic, clean and great tasting..Perfect!!

These molds work very well, but the safe baking temperature listed on the packaging is lower than the temperature the molds can in fact be used at. I called Silicone Zone, and they told me the label was misprinted. Their molds are heat safe to over 500�, and their utensils up to 600. The temperature listed on the packaging says safe to 428� which is too low for my Cannele recipe. I use them at 480� F for 20 mins. before turning the temperature down to 400, for an hour, and they work beautifully. The Canneles pop out of the molds easily, a beautiful dark brown.
